Ingredients
1 tablespoon olive oil
1 medium onion, chopped
3 stalks celery, chopped
2 cups carrots, sliced
1 teaspoon Cajun seasoning, plus more for topping
1 cup quinoa
1 quart chicken broth
4 cups water, (Add more if soup is to thick for your liking)
2 cups chopped broccoli florets
2½ cups shredded rotisserie chicken
2 tablespoons sour cream or plain yogurt
Salt and pepper to taste
Instructions
Heat olive oil in a soup pot, Add the onion, celery, carrots, and Cajun seasoning. Cook & Stir, softening vegetables for 4 minutes.
Stir in the quinoa, and then add the chicken broth and water. Season with salt and pepper. Bring to a simmer, reduce the heat and simmer for 12 minutes.
Add the broccoli and cook for 5 more minutes. Add the chicken and continue to cook for 2 minutes.
Ladle the soup into bowls. Top with sour cream and a pinch of Cajun seasoning.
