Chicken & Quinoa Soup

Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 stalks celery, chopped
  • 2 cups carrots, sliced
  • 1 teaspoon Cajun seasoning, plus more for topping
  • 1 cup quinoa
  • 1 quart chicken broth
  • 4 cups water, (Add more if soup is to thick for your liking)
  • 2 cups chopped broccoli florets
  • 2½ cups shredded rotisserie chicken
  • 2 tablespoons sour cream or plain yogurt
  • Salt and pepper to taste
Instructions
  1. Heat olive oil in a soup pot, Add the onion, celery, carrots, and Cajun seasoning. Cook & Stir, softening vegetables for 4 minutes.
  2. Stir in the quinoa, and then add the chicken broth and water. Season with salt and pepper. Bring to a simmer, reduce the heat and simmer for 12 minutes.
  3. Add the broccoli and cook for 5 more minutes. Add the chicken and continue to cook for 2 minutes.
  4. Ladle the soup into bowls. Top with sour cream and a pinch of Cajun seasoning.
