Roaster Chicken Fajitas

Ingredients
  • 1 onion, thinly sliced
  • 3 bell peppers (mixed color), seeded and cut into strips
  • 3 squash or zucchini, cut into strips
  • 8 ounces sliced mushrooms
  • 1lb your choice of protein (We use Roaster Chicken)
  • 2 packets Fajitas seasoning
  • ½ cup water
  • 1 lime, juiced
  • ¼ cup fresh chopped cilantro
  • Sour Cream or low fat plain yogurt
  • Guacamole
  • Medium Tortillas
Instructions
  1. In a large skillet or wok, cook your 1 lb of selected protein. Remove and keep warm.
  2. In the same pan add 1 tablespoon olive oil. Sauté all veggies until hot and softened, about 8 minutes.
  3. Add the 2 packets of Fajita seasoning and ½ cup water. Let mixture come to a slow simmer. Cover vegetables and cook, stirring, for 6 minutes.
  4. Add your protein back to the vegetable mixture and heat through.
  5. Remove from heat and mix the chopped cilantro into the mixture.
