Peanut Butter Sesame Noodles

Ingredients
  • Pasta:
  • 16 ounces whole wheat spaghetti noodles
  • 1 tablespoon sesame oil
  • Sauce:
  • 2 inch piece peeled fresh ginger
  • 1½ tablespoon minced garlic
  • 2 tablespoons brown sugar
  • ⅓ cup creamy peanut butter
  • 2 tablespoons rice wine
  • 3 tablespoons canola oil
  • 2 tablespoons soy sauce
  • 1 teaspoon Sriracha chili sauce
  • 3 tablespoons peanut oil
  • 1 tablespoon sesame oil
  • 1 cup chicken broth
  • 3 scallions, chopped
Instructions
  1. In a food processor or blender: Process ginger and garlic until finely minced. Add brown sugar, peanut butter, vinegar, soy sauce, chili sauce, canola oil, and 1 tablespoon sesame oil. Process until smooth. Add chicken broth. Blend well. Reserve sauce.
  2. Meanwhile, cook pasta according to package directions. Drain, Add Sesame oil to cooked pasta. Mix well.
  3. Add the sauce to the pasta and mix well.
  4. Garnish with scallions.
