Gnocchi with Mushrooms and Tuna

Ingredients
  • 16 ounce package shelf-stable potato gnocchi
  • 4 cups sliced mushrooms, about 12 ounces
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup half & half
  • 2 5 ounce cans tuna, packed in oil, drained
  • 2 ounces Parmesan cheese, grated
  • ½ teaspoon dried basil
  • ¼ teaspoon crushed red pepper flakes,
  • ½ teaspoon salt
  • ½ teaspoon pepper
Instructions
  1. Preheat the oven to 425 degrees and lightly spray a 1 ½ quart casserole dish.
  2. Cook gnocchi according to package directions.
  3. Meanwhile, in a large skillet heat olive oil; cook mushrooms on medium heat for 2 minutes. Add garlic and cook for 1 minute longer. Stir in half & half, crushed red pepper, dried basil, salt, and pepper. Simmer, uncovered, for 6 minutes, stirring often.
  4. Fold in the cooked gnocchi and tuna. Combine well. Transfer to the prepared casserole dish.
  5. Bake, uncovered for 14 minutes. Sprinkle with Parmesan cheese.
