Tom's Basic Whole Wheat Crepes

Ingredients
  • 1 cup flour
  • 2 large eggs
  • ¼ teaspoon salt
  • 1⅛ cup milk
  • 2 tablespoons butter, melted
  • Non stick spray for pan
Instructions
  1. In a large mixing bowl, whisk together the eggs, milk melted butter and salt.
  2. Gradually add the flower and stir until all lumps are removed and mix is smooth. Depending on your brand of flour, you may need to add just a little more milk to make batter smooth enough.
  3. Spray a large fry pan and heat over medium heat. Pour enough batter into pan, to coat the pan. Swirl mixture to help coat evenly.
  4. Cook crepe for about 1½ minutes, until bottom is light brown. Loosen with large spatula, turn and cook for about 1 more minute on the other side.
  5. Place crepes between sheets of waxed paper to cool slightly before using to fill.
