Apple & Walnut Wild Rice Salad

Ingredients
  • 1 cup uncooked Wild Rice
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 large Gala apple, cored and diced
  • ½ cup celery, chopped
  • ½ cup chopped toasted walnuts
Instructions
  1. In a medium skillet toast the walnuts for about 4 minutes. Set aside.
  2. Cook the rice according to the package directions and let cool.
  3. Meanwhile, in a large bowl, combine oil, vinegar, and mustard with ¼ teaspoon each salt and pepper. Mix well with a whisk.
  4. When the rice has cooled, transfer to the bowl with the dressing. Mix well and allow sitting for 30 minutes.
  5. Add the apple, celery and walnuts. Combine well. Serve at room temperature.
