Spicy Mustard Panko Crusted Chicken Breast

Ingredients
  • 1 Package (about 3 large) boneless, skinless, chicken breast halves
  • ¼ cup deli style or whole grain mustard
  • 2 tablespoons prepared horseradish sauce
  • ½ teaspoon dried thyme
  • 1 teaspoon dried tarragon or basil
  • ¾ cup Panko breadcrumbs
  • ¾ cup parmesan cheese
  • Cooking spray
Instructions
  1. Mix the mustard, horseradish sauce, dried thyme, and dried tarragon in a medium bowl.
  2. Trim any fat from chicken bread and cut in half lengthwise. Place in bowl with mustard mixture. Toss to fully coat. Cover and marinate for 8 hours or overnight.
  3. In a medium shallow bowl, combine the parmesan cheese and the breadcrumbs.
  4. Preheat oven to 450.
  5. Dredge the chicken pieces in the breadcrumb mixture to heavily coat each chicken piece.
  6. Spread the chicken pieces evenly on a sprayed cookie sheet. Lightly spray the top of each chicken piece with the cooking spray.
  7. Bake for 18 to 20 minutes.
