1 Package (about 3 large) boneless, skinless, chicken breast halves
¼ cup deli style or whole grain mustard
2 tablespoons prepared horseradish sauce
½ teaspoon dried thyme
1 teaspoon dried tarragon or basil
¾ cup Panko breadcrumbs
¾ cup parmesan cheese

Instructions
Mix the mustard, horseradish sauce, dried thyme, and dried tarragon in a medium bowl.
Trim any fat from chicken bread and cut in half lengthwise. Place in bowl with mustard mixture. Toss to fully coat. Cover and marinate for 8 hours or overnight.
In a medium shallow bowl, combine the parmesan cheese and the breadcrumbs.
Preheat oven to 450.
Dredge the chicken pieces in the breadcrumb mixture to heavily coat each chicken piece.
Spread the chicken pieces evenly on a sprayed cookie sheet. Lightly spray the top of each chicken piece with the cooking spray.
Bake for 18 to 20 minutes.
