Ingredients
3 cups water
¾ cup dried split peas
2 tablespoons butter
1 teaspoon finely grated gingerroot
½ teaspoon salt
½ teaspoon ground turmeric
½ teaspoon ground cumin
2 tablespoons fresh chopped cilantro
1 small onion
Instructions
Heat water and peas to a boiling. Boil uncovered for 2 minutes; reduce heat. Cover and simmer about 25 minutes or until peas are tender but not mushy; drain.
Heat butter in large skillet over medium/high heat. Sauté gingerroot, salt, turmeric, cumin and onion about 3 minutes or until onion is tender.
Stir in peas and cilantro until evenly coated.
