Spicy Split Peas

Ingredients
  • 3 cups water
  • ¾ cup dried split peas
  • 2 tablespoons butter
  • 1 teaspoon finely grated gingerroot
  • ½ teaspoon salt
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • 2 tablespoons fresh chopped cilantro
  • 1 small onion
Instructions
  1. Heat water and peas to a boiling. Boil uncovered for 2 minutes; reduce heat. Cover and simmer about 25 minutes or until peas are tender but not mushy; drain.
  2. Heat butter in large skillet over medium/high heat. Sauté gingerroot, salt, turmeric, cumin and onion about 3 minutes or until onion is tender.
  3. Stir in peas and cilantro until evenly coated.
