Jazzy Jasmine Rice

Ingredients
  • 1½ cups uncooked jasmine rice
  • 1½ tablespoons minced garlic
  • ¼ cup finely minced fresh ginger root
  • 3¼ cups chicken broth, heated for 2 minutes on high in the microwave
  • ¾ teaspoon kosher or sea salt
  • ½ teaspoon ground pepper
  • ¾ cup of chopped fresh cilantro
  • 3 tablespoon canola oil
  • Juice from ½ of a lime
Instructions
  1. Wash rice with clean water about 3 times to remove exterior starch.
  2. In a large saucepan, heat oil. Add ginger and garlic and sauté for about 1 minute.
  3. Add the rice and sauté for 3 minutes.
  4. Stir in the warmed broth, salt, and, pepper.
  5. Evenly sprinkle the cilantro over the top of the broth.
  6. Bring to a boil, cover, reduce heat to low and simmer for 18 minutes.
  7. Remove from heat and let sit covered for 10 minutes.
  8. Add the lime juice and stir to mix well. Serve.
