Creamy Feta Broccoli Salad
 
Ingredients
  • 1 lb broccoli florets
  • 9 ounces chickpeas, drained and rinsed
  • ½ cup crumbled feta
  • 2 cloves garlic, minced
  • 3 scallions, white and light green parts, chopped
  • ½ Colored bell pepper, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 6 ounce container Greek style peach yogurt
  • ½ teaspoon ground pepper
  • ½ teaspoon kosher salt
Instructions
  1. In a large glass style mixing bowl combine the feta, yogurt, lemon juice, garlic salt, and pepper.
  2. In a stock pot bring 2 inches of water to a boil. Add broccoli and blanch for 1½ minutes. Remove with a large slotted spoon to a strainer. Run cold water over broccoli to stop cooking process.
  3. Add broccoli to mixing bowl. Add bell pepper, scallions, and chick peas. Fold mixture together to completely blend. Cover and put in the fridge for 2 hours for flavors to blend. Serve cold or at room temperature.
