⅓ cup dried apricots or crasines, cut into small pieces
1 tablespoon minced garlic
1 cup chicken broth
¼ teaspoon garam masala
Pinch of red pepper flakes
¼ cup plain yogurt or sour cream
¼ cup finely chopped fresh parsley
Salt & Pepper to taste
Instructions
Combine the tomato sauce, chicken broth, the chickpeas, bell pepper, dried fruit, garlic, garam masala, red pepper flakes, and salt and pepper to taste, in a large skillet. Bring to a simmer.
Arrange the chicken breast in the mixture. Make sure to cover the chicken with sauce. Reduce the heat so you have a gentle simmer and cook, uncovered for 20 minutes. After the first 10 minutes, turn the chicken once.
Divide the yogurt and spoon on top of the chicken. Sprinkle with a pinch more garam masala, and fresh parsley.
