Lamb & Turkey Meatball Stroganoff

Ingredients
  • 16 Meatballs
  • 8 ounces whole wheat egg noodles, cooked according to package
  • 1 can cream of mushroom soup, healthy style
  • 8 ounces non-fat plain yogurt
  • 1 small can of mushrooms, drained
  • 1 medium onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ¼ cup chopped parsley
  • Salt and pepper
Instructions
  1. In a mixing bowl combine salt, pepper, paprika, Worcestershire sauce, mustard and soup. Mix well.
  2. In a large skillet heat ½ tablespoon oil; sauté the onions for about 5 minutes. Add the garlic and continue to sauté for 1 minute longer.
  3. Add sauce mixture. Warm for 2 minutes. Add the meatballs and combine well with the sauce. Heat for about 6 minutes, stirring often. Add noodles and continue to simmer for 6 minutes longer.
  4. Remove from heat. Add sour cream and parsley.
  5. Re-heat slightly to warm through. 1 minute.
