Cracker Jacket Pork Chops

Ingredients
  • 4 Pork Chops Center cut, ¾ inch thick
  • 2 eggs, beaten with 1 Tablespoon water to thin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 12 oz. saltine crackers, about 1 long package, crushed finely
  • 3 Tablespoons olive oil
Instructions
  1. Preheat oven to 350 degrees. Lightly spray a baking sheet
  2. In a shallow bowl, whisk garlic and onion power with the egg mixture. In a shallow pie pan place the crackers.
  3. Heat the oil in a large skillet. Dip the pork chops first in the egg mixture the rolls in the crumbs. Coat each piece.
  4. Fry in the hot oil for 1 to 2 minutes per side, just until golden brown. Remove to cooking sheet.
  5. Bake for 14 minutes total. Turning once after the first 7 minutes.
