Sweet and Sour Sauce

Ingredients
  • 1 20 oz. can finely chopped pineapple, drained with juices reserved
  • ½ low salt chicken broth
  • 3 Tablespoons apple cider vinegar
  • 1 Tablespoon soy sauce
  • ½ cup brown sugar
  • 3 Tablespoons corn starch mixed with enough broth to make a roux
  • ½ teaspoon ground ginger
  • ½ teaspoon seasoned salt
  • 1 large finely chopped onion
  • 1 large shredded carrot
  • 1 large bell pepper, finely chopped
Instructions
  1. In a large pot on the stove top, mix the pineapple juice, the chicken broth, vinegar, soy sauce and brown sugar.
  2. Stir in the ginger, seasoning salt, and cornstarch mix, until smooth.
  3. Cook, stirring constantly at a low boil until sauce thickens.
  4. Stir in pineapple, carrots & peppers.
  5. Cover and cook on low heat, stirring occasionally, for about 15 minutes.
