Greek Feast Salad
- ¾ cup chopped raw broccoli
- 4 ounces large pitted black olives, cut in half
- 1 Avocado, skinned, pitted, sliced
- 4 ounces sliced mushrooms
- 1 cup sliced apples skins with some apple still attached
- ¼ cup Parmesan cheese, shredded
- ½ head red leaf lettuce, washed, torn into pieces
- 4 cups spinach, cleaned, stemmed
- ¼ cup fresh parsley, chopped
- Dressing:
- ½ cup pre-pared light sesame dressing
- ½ cup pre-pared Greek dressing
- (Use whatever dressing you like)
- In a large mixing bowl combine the lettuce, spinach and parsley; mix well.
- Add ¼ cup of your preferred dressing and coat salad completely. Transfer your lettuce to a serving platter. Spread out all of your topping on top of the bead of coated lettuce. Cover lastly with the shredded cheese.
