Greek Feast Salad Recipe

Ingredients
  • ¾ cup chopped raw broccoli
  • 4 ounces large pitted black olives, cut in half
  • 1 Avocado, skinned, pitted, sliced
  • 4 ounces sliced mushrooms
  • 1 cup sliced apples skins with some apple still attached
  • ¼ cup Parmesan cheese, shredded
  • ½ head red leaf lettuce, washed, torn into pieces
  • 4 cups spinach, cleaned, stemmed
  • ¼ cup fresh parsley, chopped
  • Dressing:
  • ½ cup pre-pared light sesame dressing
  • ½ cup pre-pared Greek dressing
  • (Use whatever dressing you like)
Instructions
  1. In a large mixing bowl combine the lettuce, spinach and parsley; mix well.
  2. Add ¼ cup of your preferred dressing and coat salad completely. Transfer your lettuce to a serving platter. Spread out all of your topping on top of the bead of coated lettuce. Cover lastly with the shredded cheese.
