Creamy Broccoli Gnocchi
- 1 package whole wheat gnocchi, cook according to package directions
- 1 16 ounce jar Alfredo sauce
- 1 tablespoon minced garlic
- 1 4 ounce can mushrooms, drained
- 1 8 ounce jar roasted red peppers, chopped
- 1 lb broccoli florets, chopped
- ½ cup milk
- Empty Alfredo sauce and mushrooms into a large sauce pan. Use milk to get leftover sauce out of jar and dump in pan also.
- Place the broccoli in a microwave safe bowl with ¼ cup water. Cover loosely plastic wrap or a lid. Microwave for 4 minutes on high.
- Add the garlic, red peppers and cooked gnocchi. Heat for 4 minutes. Drain water.
- Add the cooked broccoli to pasta mixture and turn to completely coat. Serve.

Very simple pasta side dish with only a few items. Cook gnocchi according to the package directions. Drain and keep warm. Drain the roasted bell peppers and chop.
dump jarred sauce into a medium sauce pan with mushrooms and warm over medium low heat. Add the roasted red bell pepper and milk. Mix well.
Cook the broccoli in your desired method until still slightly firm. We use either a steamer pot or our electric steamer with about 1 inch of water and we cook the broccoli for 5 to 6 minutes. You can also put the broccoli in a microwave save bowl with about 1/4 inch of water, cover loosly with food wrap and microwave on high for 4 minutes.
When the broccoli and gnocchi is done add them to the sauce.
Mix well to combine.
Serve as a side dish or a main dish.
