Peanut Butter Sesame Noodles
Whole wheat noodles with a creamy sesame asia Thai peanut butter style sauce.
- Pasta:
- 16 ounces whole wheat spaghetti noodles
- 1 tablespoon sesame oil
- Sauce:
- 2 inch piece peeled fresh ginger
- 1½ tablespoon minced garlic
- 2 tablespoons brown sugar
- ⅓ cup creamy peanut butter
- 2 tablespoons rice wine
- 3 tablespoons canola oil
- 2 tablespoons soy sauce
- 1 teaspoon Sriracha chili sauce
- 3 tablespoons peanut oil
- 1 tablespoon sesame oil
- 1 cup chicken broth
- 3 scallions, chopped
- In a food processor or blender: Process ginger and garlic until finely minced. Add brown sugar, peanut butter, vinegar, soy sauce, chili sauce, canola oil, and 1 tablespoon sesame oil. Process until smooth. Add chicken broth. Blend well. Reserve sauce.
- Meanwhile, cook pasta according to package directions. Drain, Add Sesame oil to cooked pasta. Mix well.
- Add the sauce to the pasta and mix well.
- Garnish with scallions.

Ths may look like a lot of items for such a small side dish but its well worth the taste.
Cook pasta according to the package direction, drain, and return to pan, add 1 tablespoon of sesame ol and coat pasta. Cover to keep warm.
In a food processor or blender, process the gnger and garlic until very fine.
Add the peanut butter, brown sugar, vinegar, soy sauce, chli sauce, canola oil, and 1 tablespoon of sesame oil. Blend until smooth.
Add the chicken broth and again blend until smooth.
Add the sauce to the cooked and drained noodle and coat well. Serve.
