Spring Time Spaghetti with Sunny Side Up Eggs
Whole wheat pasta and veggies topped with a fried egg to make everything all juicy.
- 1 bunch asparagus, ends trimmed, cut in half
- 8 ounces spaghetti noodles
- 4 tablespoons butter
- 1 cup parmesan cheese
- ¼ cup fresh chopped parsley
- ½ cup onion, chopped
- 1 tablespoon minced garlic
- 4 slices thick bacon, cut in small pieces
- 1 cup cherry tomatoes cut in half
- 4 large eggs
- Reserve 1 cup of pasta cooking water
- In a large pot of salted water, cook pasta according to the package directions. Add the asparagus to the pasta pot for the last 1 ½ minutes of the cooking time. Remove and keep 1 cup of the cooking water. Drain; return the pasta and asparagus to the pot. Add the 4 tablespoons butter and parmesan. Mix until the butter fully melts. Add enough of the cooking water to the pasta to create a creamy sauce. Cover and set aside.
- Meanwhile, In a large skillet. Cook the bacon for 2 minutes. Add the onion, cook for another 2 minutes. Add the garlic; cook 1 minute. Add the tomatoes and spices. Cook for 1 minute. Add the pasta mixture to the skillet. Add the fresh parsley. Mix well. Heat through. Remove from heat and cover to keep warm.
- In a large skillet, fry 4 eggs on 1 side just until the egg whites set up. (Sunny side-up style).
- Divide the pasta between 4 plates and top with 1 fried egg each.
Lots of good fresh items go into the wonderful pasta dish.
In a large pot of lightly salted boiling water cook the pasta for 9 minutes. Add the asparags to the pasta pot and continue to boil for 1 1/2 minutes longer. Remove from heat. Reserve 1 cup of the pasta water.
Drain the remainder of the water and return the pasta and aspargus to the pot. Add 4 tablespoons of butter and Parmesan to the pot. stir until the butter melts. Add enough of the reserved pasta water to the pot to create a creamy sauce. mix well. Cover and set aside.
We used a large wok for this dish to give use the room for easy tossing of the veggies. You could also use a large skillet. Start by adding the bacon and cook for 2 minutes.
Add the onions and cook for 2 more minutes.
Add the garlic and any dry herbs you wish. Cook for 1 minute.
Add the tomatoes and cook for 1 minute.
Add the pasta mixture to the wok and toss well.
Add the fresh parsley and combine.
In a skillet, fry the eggs and place 1 egg ontop of each portion of pasta.
