Sweat & Sour Carrots
- 1 lb carrots, peeled and quartered
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 2 teaspoons sugar
- 1 teaspoon minced garlic
- ½ teaspoon dried dill weed
- ¼ cup chopped fresh parsley
- Pinch of red pepper flakes
- Steam carrots until tender crisp, about 15 minutes.
- Meanwhile, in a small pot, simmer the vinegar, oil, sugar, garlic, dill weed, and a pinch of salt for about 3 minutes.
- Season the carrots with salt and pepper to taste. Coat the carrots with the syrup mixture. Sprinkle the parsley over carrots and add a pinch of red pepper flakes.

Here’s the quartered carrots, hot pepper flakes and all of the seasoning together.
We steam /boil our carrots i a large pot with about 1 inch of water for 15 minutes or until the tenderness that you like.
Drain the carrots and return to pan. Add the vinegar, oil, sugar, garlic, and dill weed. mix well and warm through.
Transfer to a serving dish and top with minced parsley and a pinch of hot pepper seeds.
