Ingredients
  • 1 lb carrots, peeled and quartered
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 2 teaspoons sugar
  • 1 teaspoon minced garlic
  • ½ teaspoon dried dill weed
  • ¼ cup chopped fresh parsley
  • Pinch of red pepper flakes
Instructions
  1. Steam carrots until tender crisp, about 15 minutes.
  2. Meanwhile, in a small pot, simmer the vinegar, oil, sugar, garlic, dill weed, and a pinch of salt for about 3 minutes.
  3. Season the carrots with salt and pepper to taste. Coat the carrots with the syrup mixture. Sprinkle the parsley over carrots and add a pinch of red pepper flakes.
