Broccoli and Bok Choy
Inspired from: Costco Cookbook 2012
- ¾ lb Bok Choy
- 1 lb fresh broccoli florets
- 2 tablespoons canola oil
- 1 teaspoon minced garlic
- 1 tablespoon fresh minced ginger
- 2 tablespoons soy sauce
- 1 tablespoon toasted white sesame seeds
- Separate the Bok Choy stems and leaves; rough chop the leaves. Chop the stems and reserve ¾ cup. (Too many stems can be bitter).
- In a large skillet bring ½ cup water to a boil; add the chopped Bok Choy leaves and broccoli. Cover and simmer over medium low heat for 6 minutes. Uncover and cook over high heat until the water evaporates, about 3 minutes.
- Add the Bok Choy stems, oil, and garlic. Cook, tossing often, about 2 minutes.
- Add ginger and soy sauce. Gently mix. Top with toasted sesame seeds.

Chop the bok choy stems and leaves into seperate bowls. Use only 3/4 cup of stems. Too many stems makes this dish bitter. In a small dry skillet over medium/low heat, toast 1 tablespoon of sesame seed for a couple of minutes, until they get golden brown. Reserve for later use.
In a large skillet over medium/low heat bring 1/2 cup of water to a boil. Add the choped bok choy leaves and broccoli. Cover and simmer for 6 minutes.
Uncover and simmer on high for 3 minutes until the water evaporates.
Add the bok choy stems, oil, and garlic. Cook, tossing often, for about 2 minutes.
Add Ginger and soy sauce and cook for 1 minute longer.
Top with toasted sesame seeds and fill into veggies.
