Apple and Walnut Wild Rice Salad
- 1 cup uncooked Wild Rice
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 large Gala apple, cored and diced
- ½ cup celery, chopped
- ½ cup chopped toasted walnuts
- In a medium skillet toast the walnuts for about 4 minutes. Set aside.
- Cook the rice according to the package directions and let cool.
- Meanwhile, in a large bowl, combine oil, vinegar, and mustard with ¼ teaspoon each salt and pepper. Mix well with a whisk.
- When the rice has cooled, transfer to the bowl with the dressing. Mix well and allow sitting for 30 minutes.
- Add the apple, celery and walnuts. Combine well. Serve at room temperature.

We started by using a dry skillet to toast our walnuts for about 4 minutes.
We them gathered together rest of the items and got the ball rolling.
Cook the rice according to thepackage directions and let it cool off.
Meanwhile in a lare glass style mixing bowl make the dreing by combining the oil, vinegar, mustard, salt, and pepper. Mix well with a whisk or fork.
When the rice has cooled, mix into dressing and toss to coat rice. Let this rest for 30 minutes before continuing.
Now add the apples, celery, and toasted walnuts and combine well.
Serve it up. We served ours at room temp.
