Spicy Mustard Panko Crusted Chicken Breast
- 1 Package (about 3 large) boneless, skinless, chicken breast halves
- ¼ cup deli style or whole grain mustard
- 2 tablespoons prepared horseradish sauce
- ½ teaspoon dried thyme
- 1 teaspoon dried tarragon or basil
- ¾ cup Panko breadcrumbs
- ¾ cup parmesan cheese
- Cooking spray
- Mix the mustard, horseradish sauce, dried thyme, and dried tarragon in a medium bowl.
- Trim any fat from chicken bread and cut in half lengthwise. Place in bowl with mustard mixture. Toss to fully coat. Cover and marinate for 8 hours or overnight.
- In a medium shallow bowl, combine the parmesan cheese and the breadcrumbs.
- Preheat oven to 450.
- Dredge the chicken pieces in the breadcrumb mixture to heavily coat each chicken piece.
- Spread the chicken pieces evenly on a sprayed cookie sheet. Lightly spray the top of each chicken piece with the cooking spray.
- Bake for 18 to 20 minutes.

First lets mix up the mustard sauce for marinating the chicken. In a glass style bowl combine mustard, horseradish sauce, dried thyme, and dried tarragon.
Trim an visable from from the chicken breast and add to bowl with the marrinade.
Turn the chicken to coat evenly. Cover with plastic wrap and refridgerate for 8 to 24 hours.
Pre-heat oven to 450 degrees. If you have a rack for your baking sheet spary it lightly with cooking spray. Otherwise spary the cooking sheet.
In a shalow bowl combine the Parmesan cheese and panko breadcrumbs.
Coat each chicken breast evenly and gentaly press the coating on to help adhear.
Space chicken braest so they do not touch. Cook for 18 to 20 minutes. If you are not using a cooking rack it is best to turn the chicken breast over half way through the cooking.
These chicken breast come out nice and browned, but very juicy inside. No dry meat here!
We served this with a nice kwai salad.
