Spicy Split Peas
Inspired from: Betty Crocker Cookbook
Great tasting pea side dish.
- 3 cups water
- ¾ cup dried split peas
- 2 tablespoons butter
- 1 teaspoon finely grated gingerroot
- ½ teaspoon salt
- ½ teaspoon ground turmeric
- ½ teaspoon ground cumin
- 2 tablespoons fresh chopped cilantro
- 1 small onion
- Heat water and peas to a boiling. Boil uncovered for 2 minutes; reduce heat. Cover and simmer about 25 minutes or until peas are tender but not mushy; drain.
- Heat butter in large skillet over medium/high heat. Sauté gingerroot, salt, turmeric, cumin and onion about 3 minutes or until onion is tender.
- Stir in peas and cilantro until evenly coated.

In a medium sauce pan over medium heat add the water and peas. Bring to a boil. Boil uncovered for 2 minutes. Reduce heat to low, cover and cook for 25 to 30 minutes. You want the peas to be tender, but not mushy. Drain and return to pot and keep warm.
Heat butter in a large skillet over medium high heat. Add the onions, turmeric, salt, and ginger root. Sauce for about 3 to 4 minutes.
Add the onion mixture and the cilantro to the peas and combine well.
