Jazzy Jasmine Rice
- 1½ cups uncooked jasmine rice
- 1½ tablespoons minced garlic
- ¼ cup finely minced fresh ginger root
- 3¼ cups chicken broth, heated for 2 minutes on high in the microwave
- ¾ teaspoon kosher or sea salt
- ½ teaspoon ground pepper
- ¾ cup of chopped fresh cilantro
- 3 tablespoon canola oil
- Juice from ½ of a lime
- Wash rice with clean water about 3 times to remove exterior starch.
- In a large saucepan, heat oil. Add ginger and garlic and sauté for about 1 minute.
- Add the rice and sauté for 3 minutes.
- Stir in the warmed broth, salt, and, pepper.
- Evenly sprinkle the cilantro over the top of the broth.
- Bring to a boil, cover, reduce heat to low and simmer for 18 minutes.
- Remove from heat and let sit covered for 10 minutes.
- Add the lime juice and stir to mix well. Serve.

Start by getting all of the ingredients together. Wash the rice 3 times to remove any excess starch.
Heat the broth in the microwave on high for 2 minutes.
In a large sauce pan heat the oil for 30 seconds. Add the garlic and ginger and saute for 1 minute.
Add the rice and continue to saute for 3 more minutes.
Add the warmed broth, salt and pepper to the pan and stir.
Evenly spread the cilantro over the rice in the pan. Bring to a simmer, cover, reduce heat to low, and cook for 10 minutes.
After rice has cooked for 10 minutes, remove from heat. Leave covered for 5 minutes. Then stir the rice to fluff.
