Indian Stewed Chicken recipeThis is wonderful chicken dish with the flavors of indian cooking for people new to the style. It is light and tasty.

Ingredients
  • 4 6oz boneless, skinless; chicken breast
  • 1 14 oz can tomato sauce
  • 1 15 oz can chickpeas, drained & rinsed
  • 1 bell pepper, any color; thinly sliced
  • ⅓ cup dried apricots or crasines, cut into small pieces
  • 1 tablespoon minced garlic
  • 1 cup chicken broth
  • ¼ teaspoon garam masala
  • Pinch of red pepper flakes
  • ¼ cup plain yogurt or sour cream
  • ¼ cup finely chopped fresh parsley
  • Salt & Pepper to taste
Instructions
  1. Combine the tomato sauce, chicken broth, the chickpeas, bell pepper, dried fruit, garlic, garam masala, red pepper flakes, and salt and pepper to taste, in a large skillet. Bring to a simmer.
  2. Arrange the chicken breast in the mixture. Make sure to cover the chicken with sauce. Reduce the heat so you have a gentle simmer and cook, uncovered for 20 minutes. After the first 10 minutes, turn the chicken once.
  3. Divide the yogurt and spoon on top of the chicken. Sprinkle with a pinch more garam masala, and fresh parsley.

Indian Stewed Chicken recipeTransfer the mixture to a large skillet and warm over medium high heat. Add the chicken and nestle it into the sauce. Reduce to a gental simmer. Cook for 10 minutes. Turn the chicken over and continue to simmer for 10 more minutes.

Indian Stewed Chicken recipeDivide the chicken and sauce amongst 4 serving dishes. Top with a daloop of plain yogurt, apinch more Garam Marsla, and fresh chopped parsley.
