Spinach Yogurt Dip

Spinach Yogurt Dip

Ingredients
  • 1 Cup Spinach
  • 1 tablespoon fresh parsley, minced
  • 1 teaspoon garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • 1 teaspoon fresh grated lemon peel
  • 1½ teaspoons fresh lemon juice
  • ¾ cup plain yogurt
  • 2 tablespoons olive oil
  • ⅛ teaspoon cayenne pepper
Instructions
  1. Place spinach, parsley, garlic, salt, pepper lemon juice and lemon zest in food processor and puree.
  2. Transfer to a mixing bowl and combine with yogurt and olive oil.
  3. Transfer to a serving bowl.
  4. Sprinkle cayenne pepper over top.
  5. Chill for at least 4 hours before serving
