Tomato & Caper Pasta Salad

Ingredients
- 8 ounces whole wheat pasta, cooked according to package directions
- 4 Roma tomatoes, chopped
- 2 scallions, white and light green parts, chopped
- 2 large garlic cloves, chopped
- ¼ cup fresh chopped parsley
- 2 tablespoons fresh chopped cilantro
- ¼ cup drained, capers
- 1 stalk celery, finely diced
- ¾ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon dried basil
- ¼ cup canola or olive oil
- 1 smaller lemon, juiced
- 1 tablespoon white wine vinegar
Instructions
- After pasta is cooked, rise in cold water and transfer to a large glass style mixing bowl.
- Add the tomatoes, celery, capers, and scallions to the pasta, mix well.
- In a small glass bowl; wisk together the oil, vinegar, lemon juice, salt, pepper, dried basil, fresh cilantro, and fresh parsley.
- Mix dressing into pasta mixture. Cover the salad and let it either sit on the counter or in the fridge for about 2 hours for the flavors to combine well.

Gather up all of the simple items. Cook the pasta according to the package directions. Rinse in cold water to cool and transfer to a glass style mixing bowl.
In a small glass bowl combine the oil, vinegar, salt, papper, dried basil, fresh cilantro, and fresh parsley.
Whisk well.
Add the tomatoes. capers, and scallions to the bowl with the pasta.
Add the dressing mix to the pasta bowl.
Toss to completely mix well. Cover and let sit in the refridgerator for atleast 2 hours for the flavors to develope and soak into the pasta noodles.
