Asian Asparagus and Muchrooms
2 of our favorite veggie cooked in our favorite style, “Asian”.
- 1 bunch asparagus, ends trimmed off, cut into thirds
- 2 teaspoons sesame oil
- 1 tablespoon minced fresh ginger
- 3 cups sliced mushrooms
- 1 teaspoon minced garlic
- 1 tablespoon soy sauce
- 1 tablespoon butter
- ⅓ cup water
- Salt and pepper
- In a large skillet heat sesame oil and add ginger. Cook for 1 minute. Add mushrooms and garlic; continue to cook, stirring, for 2 minutes. Add asparagus and water; bring to a boil, cover and cook for 3 minutes. Add soy sauce and butter; cook for 1 minute longer. Season with salt and pepper.
Light , easy dish with only a few items to make it sparkel. Make sure to cut the ginger small enough to make it eatible. Also cut the asparagus in half.
In a large skillet over medium high heat warm the sesame oil. Add the ginger and cook for 1 minute.
Add mushrooms and garlic and continue to cook for 2 minutes longer.
Add the asparagus and water; bring to a boil, cover and cook for 3 minutes. Add butter and soy sauce and continue to cook for 1 minute. Season with salt and pepper.
