Asian Tilapia with Bok Choy
Great light and healthly fish stir-fry.
- 1 lb tilapia filets, cut into 1” sections
- ½ lb Bok Choy
- 1 tablespoon sesame seed
- 1 tablespoon canola oil
- 6 green onions cut into 2” pieces
- 1 colored bell pepper, cut into thin strips
- ½ cup chicken broth
- ½ teaspoon red pepper flakes
- 1 tablespoon corn starch
- 1 tablespoon Teriyaki sauce
- 8 ounces hot cooked thin spaghetti
- Remove the leaves from the Bok Choy and cut into ½” strips. Cut the stems into ¼” slices.
- In a large skillet; Cook Sesame seeds in oil over medium heat for 2 minutes, until golden brown. Add Bok Choy stems, onions, bell pepper, fish, broth, and pepper flakes. Bring to a boil; reduce heat to a simmer. Cover pan. Simmer for 5 minutes.
- Mix cornstarch with teriyaki sauce. Add mixture to fish. Heat to a boiling, stirring constantly. Boil and stir for 1 minute. Add Bok Choy leaves and heat until wilted.
- Serve over pasta.
As you can see not a lot of items need to go into this great stir-fry to make it taste good. We seperated the leaves and the stems of the Bok Choy for even cooking.
We start with 1 tablespoon of oil and we cook the sesmae seeds for 2 minutes to trurn them a golden brown.
You can see the beautiful gloden color.
Add the Bok Choy stems, onions, bell peppers, fish pieces, broth, and pepper flakes.
Bring to a boil, reduce heat. Cover and simmer for 5 minutes.
Mix cornstarch with teriyaki sauce. Add to wok. Stir and cook for 1 minute. Add Bok Choy leaves and cook until wilted.
Serve stir-fry over cooked thin pasta noodles.
